Open buffet is a complete catering format

Open buffet works when you want broad choice, flexible pacing and enough variety for a mixed guest group. It is especially useful for weddings, company celebrations, large private events and occasions where guests will eat at slightly different times rather than receiving the same course simultaneously.

The buffet is only one part of the operation. LOriental plans the menu, production, transportation, staging and back-of-house areas, buffet mise en scène, service points, replenishment, tableware where included, trained service staff and complete on-site execution. We do not treat an open buffet as food delivered to a table.

You do not need to begin by choosing individual dishes. The more useful first question is how you want your guests to experience the meal.


Dînatoire Buffet Experience

A shorter, movement-friendly dining format that combines canapés, tapas and starters, salads, selected starter and primi stations, main-course buffet items, sides, sweet bites or dessert stations, and drinks. It works when the event needs more substance than a reception but should still feel social and fluid.

Signature Buffet Experience

A broader full-event buffet with more choice across starters, salads, live primi, main-course stations or buffet dishes, sides, desserts and beverages. This is a strong base for weddings, corporate celebrations and larger private events where the meal needs range without losing structure.

Grand Buffet Experience

The widest of the current buffet formats, with greater breadth across salads, starters, live stations, main courses, sides and desserts. Use it when the food itself is expected to occupy a significant part of the guest experience and the venue can support the required footprint, service points and production.

All three formats can be adjusted around the event brief. The exact menu, number of live elements, table setup and service plan are confirmed in the proposal.

Or build your own buffet menu

For a more specific brief, build the buffet à la carte. The current LOriental collection allows us to work across salads, soups and starters, poultry, beef, seafood, pasta and rice dishes, substantial sides and desserts.

The menu does not have to belong to one cuisine. It can stay familiar and generous, move in a more international direction, or combine Egyptian and Middle Eastern hospitality with European and Asian dishes for a mixed audience.

Finger food and canapés are our specialty. Full-service catering is what we do.

Our specialization in finger food and canapés sits inside a much broader catering operation. The same team can take an event from reception canapés through main-course dining, live culinary experiences, desserts and beverages.

Our kitchen covers poultry, beef and seafood alongside salads, starters, pasta, rice dishes, substantial sides and desserts. Representative dishes include Beef Bourguignon, Moroccan Beef Tagine, Butter Chicken, Sea Bass with Lemon Beurre Blanc, Seafood Paella, Mushroom & Truffle Ravioli, Muammar Rice with Duck and Potato Gratin Dauphinois.

Many dishes can move between buffet presentation and individually plated seated service, which gives us room to build very different event formats from the same wider culinary collection.

What can go on the buffet

Salads & cold dishes

Examples from the current collection include Apple Cranberry Pecan Salad, Arugula Grison Walnut Salad, Asian Cucumber Salad, Fattoush, Tabbouleh, Summer Berry Salad, Hawaiian Tuna Salad, Thai Crab Noodle Salad and Shrimp Pasta Salad.

Soups, starters & appetizers

The wider buffet menu can include Creamy Roasted Pumpkin Soup, French Onion Soup, Roasted Tomato & Basil Soup, kibbeh with pine nuts and raisins, fatayer, mixed dolma, spring rolls, steamed dumplings, calamari, samosas and other hot or cold starters.

Poultry & meat

Representative main-course options include Butter Chicken, Chicken Piccata, Chicken Marbella, Coq au Vin, Duck with Orange Sauce, Tandoori Chicken, Beef Bourguignon, Beef Medallions, Beef Rendang, Moroccan Beef Tagine, Ossobuco alla Milanese and Veal Émincé à la Crème.

Seafood

Seafood can move from straightforward buffet dishes into more premium selections. Current examples include Salmon Teriyaki, Sea Bass with Lemon Beurre Blanc, Garlic Butter Shrimp Scampi, Butter-Poached Lobster, Seafood Gratin, Seafood Paella, Seafood Risotto and Thai Shrimp Curry.

Sides, pasta & rice

The collection includes Potato Gratin Dauphinois, Riz Royal, Muammar Rice with Duck, Mushroom & Truffle Ravioli, Spinach & Ricotta Ravioli, Garlic Butter Shrimp Fettuccine, Lasagna Bolognese, Eggplant Fatta, Moussaka and other rice, pasta and vegetable dishes.

Add live culinary stations

A buffet does not have to be entirely static. Selected parts of the meal can be cooked, finished, carved or assembled in front of guests. The point is not simply to add another counter. Live service can improve freshness, manage a dish that benefits from last-minute finishing and create a clear guest-facing moment inside the wider buffet.

Pasta Viva and Risotto Rêverie bring final cooking and Parmesan-wheel finishing into the room. Live Paella turns the cooking vessel itself into a focal point. Tenderloin Full Roast and Turkey Carving create controlled carving service. Brazilian Churrascaria moves protein service through the guest area. Oriental Fiteer brings regional preparation into the event, while Lobster & Shrimp Live Grill creates a premium seafood centerpiece.

Use one station to punctuate the buffet or combine several when live food should become a larger part of the event.

Presentation is part of the buffet

A strong buffet should look as if it belongs in the room. LOriental treats buffet mise en scène, food display, risers, serving pieces, essential décor and the relationship between food and venue as part of the catering plan.

For weddings and private celebrations, presentation can respond to the event's florals, materials and visual direction. For corporate events, selected display elements can follow approved brand colours or event identity.

When the buffet becomes theatrical

Theatrical Hospitality is optional. A buffet can remain polished and conventional, or selected parts can become more dramatic when the event calls for it.

Within Open Buffet, that can mean oversized or maximalist food presentation, sculptural grazing compositions, dramatic charcuterie or mezze displays, integrated live cooking and carving, movement, lighting or a designed reveal. The theatrical layer should create a real guest-facing moment. It should not turn every premium buffet into 'theatre' by default.

Before the buffet: canapés & reception service

Many events work better when guests are not sent straight to the main buffet. A canapé reception gives arrivals their own rhythm and allows the dining area to open at the right point in the programme.

Choose a display of finger food and canapés, premium Experiential Passaround for circulating service, or selected Theatrical Pass-Around when the arrival of the food should become a visible moment.

Designed for Different Events

The format should follow the occasion.

Weddings & Marriage Celebrations

A wedding may begin with Experiential Passaround, move into a Signature or Grand Buffet, add Pasta Viva, Risotto Rêverie, Tenderloin Full Roast or Lobster & Shrimp Live Grill, then finish with passed sweets or a live dessert experience.

For a more formal celebration, the same evening can move into plated or family-style seated dining, with theatrical presentation reserved for one or two moments where it actually adds something. The Events plan specifically treats weddings as a sequence from arrival and ceremony through dinner, dessert and the late evening. 

Corporate & Business Events

Corporate dining at LOriental can look completely different depending on the objective. A company celebration may need several buffet and live-station points to handle volume. A conference lunch may need a fast, controlled buffet that gets delegates back into the room. An executive dinner may call for a shorter seated menu, restrained table-side service and a more discreet operating footprint. A gala may need courses timed around stage cues and awards.

For full-day programmes, lunch can be coordinated with morning and afternoon coffee break catering.

The menu can also carry the company identity through selected branded presentation, drink styling and theatrical elements where the brief calls for them. 

Private & Social Celebrations

For birthdays, anniversaries, family gatherings and celebrations at home, the format can be built around the way people will actually spend the evening.

That may mean a compact seated dinner, a generous buffet, family-style mains, or a mixed format with passed food followed by live stations and dessert. LOriental’s wider collection gives us room to move from familiar crowd-pleasers into more distinctive elements such as Vine Leaf Sushi, Brazilian Churrascaria, Oriental Fiteer, Om Ali Oasis or Mille-Feuille Royale without forcing the whole event into one style. The Events hub intentionally keeps this category broad because the right format depends heavily on the space and guest behaviour. 

Diplomatic & Governmental Events

For embassy receptions, national celebrations, official dinners and governmental functions, we usually dial the presentation in more carefully.

A hosted dinner may use seated dining or a refined buffet with a clear service sequence. Menus can combine Egyptian and Middle Eastern hospitality with international dishes for mixed delegations, while Arabian coffee and dates, live karak, regional stations or selected Egyptian desserts can be introduced where they suit the host and occasion.

LOriental’s role here is as much about timing, discretion and service control as it is about the food. 

Arts, Culture & Entertainment

For museum receptions, cultural programmes, premieres and performance-led events, the catering should belong to the programme.

A cultural dinner might use an Egyptian-led buffet with Oriental Fiteer, Egyptian Street Food and regional desserts. An arts gala may move from passed canapés into seated dining. A concert may need VIP hospitality before the show, backstage service during it and buffet or live stations only once the performance window has passed.

This is also where LOriental’s Experiential Passaround and Theatrical Hospitality can be useful, provided they support the setting instead of competing with it. 

Expos & Trade Events

Trade events need a different kind of discipline. Food has to serve quickly, replenish cleanly and stay inside a compact footprint.

For hosted lounges, that may mean a controlled buffet or seated hospitality area. For larger brand activations, the format can expand into live stations, branded presentation or a more substantial meal, provided the stand layout, organiser rules and visitor flow can support it.

The Events architecture specifically treats expo hospitality around compact food, continuous replenishment and keeping service out of the visitor path.

Pair the meal with LOriental’s non-alcoholic beverage service. The collection includes non-alcoholic cocktails, seasonal fresh juices, tea, coffee, live karak, specialty drinks, welcome service and table-side beverage service. Premium formats can include live mixology and customized bar décor.

Desserts

Finish with classic buffet desserts, passed sweet bites or an interactive live dessert experience. Current options include Cannoli, Churros, Crêpe & Waffle, Mille-Feuille Royale, Om Ali Oasis, Tiramisu Experience, Fiteer Meshaltet and Zalabia & Balah El Sham.

Full-service catering. Never just a buffet drop-off.

LOriental Moments is a full-service caterer. For private and consumer events, we do not provide food-only drop-off catering or trays of prepared food delivered without service.

Depending on the confirmed scope, our team handles menu planning, food production, transportation, staging and back-of-house preparation, buffet setup and mise en scène, service staff, replenishment, live preparation where applicable and breakdown after service.

Food quality, presentation, timing, guest flow and service are treated as one operation.

Start with the kind of event you want to create.

Tell us the event date, event type, venue or area and expected guest count. You do not need to have every menu decision made before contacting us.

Choose an open buffet from one of our established menus or build your own à la carte selection. For a more formal experience, choose a seated dinner from one of our set menus or create your own plated, family-style or mixed format.

Then decide how far you want to take it: reception canapés, Experiential Passaround, Theatrical Catering, live culinary stations, mobile table-side service, event décor, desserts and non-alcoholic beverage service can all be added where they improve the event.

Can I build my own open buffet menu?

Yes. You can begin with one of LOriental's complete buffet experiences or build your own combination from the wider collection of salads, starters, poultry, beef, seafood, pasta, rice dishes, sides and desserts.

Can live cooking stations be added to an open buffet?

Yes. One or several live culinary stations can be integrated into the wider buffet. The right choice depends on the venue, service footprint, guest count and the role you want live preparation to play.

Can canapés be served before the buffet opens?

Yes. A canapé reception can precede the buffet through display, Experiential Passaround or selected Theatrical Pass-Around.

Do you provide buffet tables, service staff and setup?

Yes. LOriental operates as a full-service caterer. The exact inclusions depend on the selected package and proposal, but the catering operation can include buffet setup, service staff, transportation, staging, tableware, décor and complete on-site execution.

Can the buffet include Egyptian and international food?

Yes. The current collection spans Egyptian and Levantine dishes alongside French, Italian, Asian, Indian, Moroccan, Spanish, Brazilian, Mexican and regional American influences.

Do you cater open buffets at historic or outdoor venues?
Yes, subject to an operational assessment of the venue. Access, preparation space, power, water, refrigeration, service routes and venue restrictions are reviewed before the final menu and setup are confirmed.
Does LOriental offer buffet food delivery without service?
For private and consumer events, no. LOriental Moments operates as a full-service on-site caterer and does not offer drop-off catering or food-only delivery.

For corporate clients, large institutional orders or other substantial requirements, contact us to discuss the scope. We can assess whether a tailored supply or delivery arrangement is appropriate.
